Roast Chicken with Curry Leaf Dukkah

Ingredients

  • 1 whole chicken
  • 2 tbsp curry leaf dukkah
  • 1 tbsp olive oil
  • 1 tsp salt
  • Freshly ground pepper

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Rub the chicken with olive oil, salt, and pepper.
  3. Sprinkle curry leaf dukkah generously over the chicken.
  4. Place the chicken in a roasting pan and roast for 1 hour and 20 minutes, or until fully cooked.
  5. Let the chicken rest for 10 minutes before carving. Serve and enjoy!

Note: You can substitute curry leaf dukkah with your favorite spice blend if unavailable.
